Honey Bun Cake is moist and delicious
If you're a fun of the famous honey bun snack cakes, then you will absolutely fall in love with this cake! It's kind of a cross between a spice cake and a coffee cake. The best part is that it only takes a few minutes to whip-up too!
Ingredients
- Yellow cake mix: save yourself the time and trouble and grab a box of cake mix for this dessert!
- Pumpkin puree: I promise this pumpkin puree is absolutely delicious in this cake! It makes it super moist, and gives it the amazing taste of fall.
- Milk: the back of the box for the cake mix calls for water, but you will use milk instead!
- Cinnamon & Sugar: the brown sugar and cinnamon is going to give you the honey bun taste that you're familiar with. You can use light brown sugar or dark brown sugar.
- Powdered sugar: to make the super simple glaze, you just mix vanilla extract, milk, and powdered sugar together!
How to Make It
See recipe card for ingredient quantities and full instructions.
Start by preheating your oven to 350ºF and grease a 9x13 baking dish
Add your box cake mix, milk, oil, and eggs to a large bowl.
Now mix in your pumpkin puree.
Combine the cinnamon and sugar in a separate bowl.
Mix it well and set it aside.
Pour half of the batter into the baking dish, then sprinkle the cinnamon sugar mixture on top. Then pour the remaining half of the batter on top. Now bake the cake for about 45 minutes.
Pro Tips
- You can add the layer of cinnamon and sugar in between the cake mix, or on top.
- Pour the glaze over the top of the cake while it is still warm
- Let the cake sit for about 10 minutes before serving so that the glaze can harden a bit
Making the powdered sugar glaze
Add the powdered sugar to a bowl and slowly pour in the milk and vanilla extract. If you want a thicker glaze, only add a little bit of milk. If the glaze is too thick, add more milk.

Ingredients
- 1 box Yellow cake mix don't use measurements on the back of the box
- ½ cup Vegetable oil
- ¾ cup Milk 2%
- 3 large Eggs
- 1 ½ cups Pumpkin puree
- 2 teaspoon Cinnamon
- 1 cup Brown sugar light brown, packed
Powdered Sugar Glaze
- 2 cups powdered sugar
- 4-6 tablespoons Milk use more or less depending on how thick you want the glaze
- 1 teaspoon Vanilla extract
Instructions
Preheat your oven to 350ºF. Spray a 9x13 baking dish with non-stick cooking spray and set it aside.
Add your cake mix to a large bowl, then add in your oil, milk, eggs, and vegetable oil, and pumpkin puree. Use an electric hand mixer or a whisk and blend the cake on high for 2 minutes, or until everything is fully combined.
Mix the cinnamon and brown sugar in a small bowl and set it aside. Pour half of the cake batter into the baking dish and sprinkle the cinnamon sugar mixture over the top evenly. Now pour the remaining batter on top.
Place the baking dish in the oven and bake the honey bun cake for 35-45 minutes, or until a toothpick is inserted in the middle and comes out clean (no wet batter is on it).
Make the glaze for the cake
While the cake is baking make the powdered sugar glaze. Add your powdered sugar to a bowl and gently pour in 2-3 tablespoons of milk along with the vanilla extract.
Use a spoon or a small whisk to mix the glaze up. If the glaze is too thick, add a little bit of milk at a time until you get the consistency you want.
Glazing the honey bun cake
Once the cake is done baking, remove it from the oven and pour the glaze all over the cake while it is still warm.
Allow the glaze to set for about 10 minutes before serving so that it can harden a bit. And enjoy!
Notes
You can also add the cinnamon sugar mixture directly on top of the cake mix before baking and use a toothpick to swirl it around to make a cute little pattern instead of adding it between the layers of cake.
